Direction For Use : Amaranth can be cooked as a cereal, ground into flour, sprouted or roasted. The seeds can be cooked with whole grains such as millet and rice (2 1/2 portion water, 1 portion amaranth), added to stir-fry or soups and sews as a nutrient dense thickening agent. Sprouting the seeds will increase the level of some of the nutrients and the sprouts can be used on sandwiches and in salads.
